
I’ve been baking all day – raspberry muffins, blueberry muffins, scones and fruitcakes and i’ve started icing some mini Christmas cakes i’m doing for a few members of the family too. Yes i know i need practice … a LOT of practice! :)
I baked this cake yesterday and if you love ginger then i highly recommend it! I substituted Muscavado sugar with dark brown sugar cos i didn’t have any. I also omitted the icing because we’d rather have it with whipped cream or custard.
